Vegan Cheesy Broccoli Pasta: A Nutrient-Dense Meal

While plain wheat pasta may be a bit of an empty-calories choice for dinner, because it is very low in nutrients, black bean pasta is a different story. It contains much of the health benefits of black beans, though of course I recommend making whole foods (aka black beans) the bulk of your diet, and eating slightly processed foods like pasta seldomly. Hence, this vegan cheesy broccoli pasta is much more nutrient-dense than your regular pasta recipe.

All that being said, this vegan cheesy broccoli pasta is incredible nutrient-dense. As such, it contains the delicious oat-based cheese sauce, as well as a ton of delicious and slightly crispy broccoli. Fonally, after eating a lot of this stuff, I got to a point where all I wanted was the broccoli with the cheese sauce rather than the pasta. In fact, you could actually skip it in this dish. But if you are craving a slightly heavier meal, go for it. If you are going to have pasta, this is the perfect version. Fat free, protein rich, and absolutely yummy-licious. Can you believe you can make delicious cheese sauce from nutrient-rich oats? I just love plants, seriously…

Fat Free Protein-Rich Cheesy Broccoli Pasta

Prep Time 20 minutes
Cook Time 15 minutes
Total Time 35 minutes
Servings 1

Ingredients

For the cheesy sauce

  • 2 cups oats
  • 1 cup sauerkraut juice or water if using water, be sure to add a bit extra salt to taste
  • A pinch of black pepper
  • 2/3 cup nutritional yeast flakes
  • 2 tablespoons chickpea miso paste
  • 1 red pepper seeded
  • Juice of 1/2 a lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric powder

For the broccoli

  • 3-4 cups roughly chopped broccoli

For the pasta

  • 3 cups bean pasta I used black bean

Sprinkle on top

  • Red pepper flakes and extra black pepper optional

Instructions

For the cheesy sauce

  • Blend all ingredients until smooth

For the broccoli

  • Steam for 3-5 minutes, or until slightly tender

For the pasta

  • Cook according to package directions
