What is the perfect hiking food? It’s filling, it’s so easy to make, and it tastes absolutely amazing! I am talking about overnight oats.
I love making overnight oats the night before I go on a big hike (which hopefully should happen every weekend, as the weather here in San Diego allows for it most of the time). This is the hardest hike in San Diego, because the way back contains rolling hills just like the way there. It took us 8 hours!
It was actually my 30th birthday hike, and the effort of hiking for 8 hours was so worth it (as well as the insanely sore calves I had for an entire week after these rolling hills!!!)
The views from the top of the mountain were absolutely incredible and so peaceful. That is when we pulled out our delicious meals!
What did we bring to the top of the mountain? Tomer and I had our overnight oats of course! It’s such a filling meal, and my favorite part about it is that it’s so easy to put together the night before.
Overnight oats are also perfect to take to work because they are packed with amazing nutrition, healthy fats, whole grains, and even some veggies as you are about to see.
Today, I have two awesome overnight oats recipes for you. The first recipe is chocolaty blueberry overnight oat, while the second is carrot cake overnight oats. Yum!!! Turn your breakfast into dessert!

Chocolaty Blueberry Overnight Oat
This delicious chocolaty heaven recipe is packed with berries, magnesium-rich raw cacao nibs, flax seeds (which you should be eating every day), and of course, oats. It’s date-sweetened, so there are literally no processed ingredients in here.
I know that a lot of people sweeten their oats with maple syrup. I used to love eating maple syrup in my desserts and overnight oats too, but have switched over to dates. Maple syrup is actually an empty calorie food, just like white table sugar (I know, it’s sad because it’s so delicious!) Not that I don’t ever consume maple syrup – it’s an occassional treat, but I don’t recommend eating it on a daily basis.
But trust me, using dates in these overnight oats will give you just as much sweetness and satisfaction, I promise!
- 2 cups rolled oats
- 1 cup filtered water
- 2 cups fresh or frozen blueberries, or other berries of choice
- 1 tablespoon whole flax seeds (I prefer golden)
- 2 Medjoul dates, pitted
- 1 ripe and spotty banana, peeled
- 1/4 teaspoon ground turmeric
- 1 pinch black pepper
- 1 teaspoon cinnamon
- 1 tablespoon cacao nibs
Use a small blender to grind flax seeds
Pit and chop the dates
Mix oats and water very well in a bowl
Add banana to the oats, and mash it very well
Add flax, berries, chopped dates, turmeric, black pepper, and cinnamon; top with cacao nibs
It’s best to store in the fridge overnight and enjoy in the morning, but you can also eat this breakfast right away
Carrot Cake Overnight Oats
Are you a fan of carrot cake? I love raw vegan carrot cake (which I should definitely make a recipe for one day). But these overnight oats are seriously like carrot cake in breakfast form! So delicious, nutrient-dense and filling.
The combination of dates, carrot, and pecan is just perfect, and allows you to get your dailiy vitamin A from the orange-colored vegetable, carrots. Yummy!
Soak pecans in filtered water overnight.
Rinse and drain pecans, and chop thinly.
Grind flax seeds upon use (do not buy ground) in a small blender
Place oats in a bowl, and add all other ingredients.
Allow to sit for 10-15 minutes, or overnight for best results.
